Dough for Dough

Homemade pizza dough that is! Stir up a batch of dough and store it in the frig for a quick fix dinner! No two pizzas are ever alike so they never get boring. I made the dough on Sunday and purchased some special toppings like fresh mozzarella, basil, goat cheese and pepperoni to have for dinner that night.  Then on Monday I just rolled out the leftover dough, used whatever was in the frig for toppings, and I had a completely different dinner. Pizza makes great lunches too!  I used the Barefoot Contessa recipe that follows just in case you were wondering. Dough Recipe:
1 1/4 cups warm water
2 pks dry yeast
1 tbls honey
3 tbls olive oil
4 cups flour
2 tsp kosher salt

Mix together in eletric mixer for about 10 min. Knead by hand 12 times. Place in greased bowl and cover with towel to rise 30 min. Divide into 6-8 balls and roll out those you need now (store the rest in the frig or freeze). Place on cookie sheet, cover, and rise for 10 min. Cover with toppings and cook at 500 for 15 min (drizzle with olive oil before and after toppings) YUMMY
